Matcha powder is made by grinding Tencha (a type of green tea) with a tea grinding mortar into a fine powder. Matcha powder and hot water are placed in a tea cup and stirred with a bamboo whisk called Cha-sen. In Japanese tea ceremony, there are 2 types of tea – Koicha (thick) or Usucha (thin). Koicha has a thick flavor and a paste-like texture while Usucha has a lighter flavor and fluid texture that froths when stirred.
